Lime and potato pud­dings

Prepa­ra­tion: 15 min­utes Cook­ing: 20 min­utes Serves: 4 In­gre­di­ents 2 medium pota­toes, cooked, mashed 2 tbsp but­ter

1⁄3 cup sugar 2 eggs, sep­a­rated 1 tbsp lime rind 1 tsp lime juice 2 tbsp sul­tanas

1⁄3 cup SR flour


Place but­ter, pota­toes, sugar, rind, sul­tanas and flour into a bowl. Add egg yolks, lime juice and 1 tsp star anise only. Mix well. Beat egg whites to form soft peaks and gen­tly fold into the mix­ture. Pour into a greased muf­fin pan. Sprin­kle with re­main­ing star anise. Bake at 180C oven for 20 min­utes or un­til firm to touch and golden brown. Dust with ic­ing sugar to serve.
