Lime and potato puddings
Preparation: 15 minutes Cooking: 20 minutes Serves: 4 Ingredients 2 medium potatoes, cooked, mashed 2 tbsp butter
1⁄3 cup sugar 2 eggs, separated 1 tbsp lime rind 1 tsp lime juice 2 tbsp sultanas
1⁄3 cup SR flour
Place butter, potatoes, sugar, rind, sultanas and flour into a bowl. Add egg yolks, lime juice and 1 tsp star anise only. Mix well. Beat egg whites to form soft peaks and gently fold into the mixture. Pour into a greased muffin pan. Sprinkle with remaining star anise. Bake at 180C oven for 20 minutes or until firm to touch and golden brown. Dust with icing sugar to serve.
