Prepa­ra­tion: 10 min­utes Cook­ing: 20 min­utes Serves: 4 In­gre­di­ents 45g but­ter

1⁄2 cup sugar Rind and juice of 2 limes

1⁄2 cup plain flour, sifted 1 cup milk 2 large eggs, sep­a­rated Cream to serve

Method

Cream but­ter, rind and sugar un­til light and fluffy. Add egg yolks. Beat. Add flour, milk and juice to pro­duce a soft mix. Whip egg whites. Fold into pud­ding mix­ture lightly. Pour into an oven-proof dish. Bake at 180°C for 20 min­utes or un­til golden.
