1⁄2 cup sugar Rind and juice of 2 limes
1⁄2 cup plain flour, sifted 1 cup milk 2 large eggs, separated Cream to serve
Cream butter, rind and sugar until light and fluffy. Add egg yolks. Beat. Add flour, milk and juice to produce a soft mix. Whip egg whites. Fold into pudding mixture lightly. Pour into an oven-proof dish. Bake at 180°C for 20 minutes or until golden.
