200g crab meat, fresh or tinned 270g sweet corn ker­nels, fresh or tinned 500g Royal Blue or Ruby Lou pota­toes, steamed and mashed 3 spring onions, chopped 1 tbsp lemon or lime rind 2 eggs, beaten Olive oil Kiwi and av­o­cado salsa 2 kiwi fruit, chopped 1 av­o­cado, peeled and chopped Sprig of mint, chopped finely 1 red chilli, chopped (op­tional) 1⁄2 lemon or lime, juiced


Roughly mash the pota­toes and al­low to cool. Add the crab meat, corn, spring onions, rind and beaten eggs. Sea­son with salt and pep­per. Form into pat­ties. Pre­heat fry­ing pan, add oil and add pat­ties. Fry un­til golden brown. Serve with the salsa.
