Serve with a kiwi and avocado salsa

200g crab meat, fresh or tinned 270g sweet corn kernels, fresh or tinned 500g Royal Blue or Ruby Lou potatoes, steamed and mashed 3 spring onions, chopped 1 tbsp lemon or lime rind 2 eggs, beaten Olive oil Kiwi and avocado salsa 2 kiwi fruit, chopped 1 avocado, peeled and chopped Sprig of mint, chopped finely 1 red chilli, chopped (optional) 1⁄2 lemon or lime, juiced
Roughly mash the potatoes and allow to cool. Add the crab meat, corn, spring onions, rind and beaten eggs. Season with salt and pepper. Form into patties. Preheat frying pan, add oil and add patties. Fry until golden brown. Serve with the salsa.
