Ki­wifruit co­conut rice pud­ding

Rice pud­ding gets a trop­i­cal twist with co­conut and ki­wifruit. WA ki­wifruit are at the peak of the sea­son right now so are a per­fect way to jazz up a tra­di­tional favourite com­fort food.

Prepa­ra­tion: 15 min­utes Cook­ing: 1hr 15 min­utes Serves: 4 In­gre­di­ents ¼ cup short-grain rice 1 tsp orange zest 250ml co­conut milk 100ml milk 1 tbsp cas­tor sugar 1 tsp vanilla essence 100ml cream 2 ki­wifruit, peeled and cut into chunks


Place the rice, zest, co­conut milk, milk, sugar and vanilla in a pot over medium heat and slowly bring to the boil with­out the lid on. Once the mix­ture is boil­ing, im­me­di­ately re­duce the heat to low. Place a lid on the pot and cook, stir­ring oc­ca­sion­ally for 1 hour. When the rice is cooked, re­move the pot from the heat. Stir in ki­wifruit and leave to cool with the lid on. Once the mix­ture is cool, stir in the cream, transfer to a cov­ered bowl and re­frig­er­ate un­til ready to serve.
