Kiwifruit coconut rice pudding
Rice pudding gets a tropical twist with coconut and kiwifruit. WA kiwifruit are at the peak of the season right now so are a perfect way to jazz up a traditional favourite comfort food.
Preparation: 15 minutes Cooking: 1hr 15 minutes Serves: 4 Ingredients ¼ cup short-grain rice 1 tsp orange zest 250ml coconut milk 100ml milk 1 tbsp castor sugar 1 tsp vanilla essence 100ml cream 2 kiwifruit, peeled and cut into chunks
Place the rice, zest, coconut milk, milk, sugar and vanilla in a pot over medium heat and slowly bring to the boil without the lid on. Once the mixture is boiling, immediately reduce the heat to low. Place a lid on the pot and cook, stirring occasionally for 1 hour. When the rice is cooked, remove the pot from the heat. Stir in kiwifruit and leave to cool with the lid on. Once the mixture is cool, stir in the cream, transfer to a covered bowl and refrigerate until ready to serve.
