Chicken and avocado burritos
Preparation: 10 minutes Cooking: 15 minutes Serves: 4
1 tbsp olive oil 2 cloves garlic, crushed 400g stir-fry chicken strips 1 bunch spring onions, sliced 1 red capsicum, diced 200g button mushrooms, sliced 2 firm ripe tomatoes, diced 2 tsp ground cumin 1 tbsp ground coriander 8 burritos or lavash bread 2 avocados, peeled and diced Reduced fat yoghurt, to serve
Heat oil in a large frying pan. Add garlic and chicken. Cook over medium heat for about 5 minutes. Stir in spring onions, capsicum, mushrooms, tomatoes and spices. Cook gently for 10 minutes. Meanwhile, heat burritos according to directions on the packet. Add avocado to chicken mixture. Divide mixture into eight portions. Spoon mixture onto each burrito. Roll up and secure with a toothpick. Serve burritos while warm with a dollop of reduced fat yoghurt.
