Zuc­chini and potato burg­ers

Prepa­ra­tion: 30 min­utes with chill­ing time Cook­ing: 30 min­utes Serves: 4 In­gre­di­ents 2 tbsp bar­be­cue sauce

1⁄4 cup chopped pars­ley 1 tbsp chopped chives 1 egg, lightly beaten 1 cup in­stant oats 1 zuc­chini, grated 2 medium pota­toes, peeled and chopped Method Steam or mi­crowave pota­toes for 8 min­utes or un­til cooked. Mash. Com­bine mashed potato with other in­gre­di­ents. Mix well. Shape mix­ture into 8 burg­ers. Cover and place in the fridge for at least 30 min­utes. Grill or bake for 15-20 min­utes. Serve with a side salad or in a roll with salad. Serve im­me­di­ately.
