Zucchini and potato burgers
Preparation: 30 minutes with chilling time Cooking: 30 minutes Serves: 4 Ingredients 2 tbsp barbecue sauce
1⁄4 cup chopped parsley 1 tbsp chopped chives 1 egg, lightly beaten 1 cup instant oats 1 zucchini, grated 2 medium potatoes, peeled and chopped Method Steam or microwave potatoes for 8 minutes or until cooked. Mash. Combine mashed potato with other ingredients. Mix well. Shape mixture into 8 burgers. Cover and place in the fridge for at least 30 minutes. Grill or bake for 15-20 minutes. Serve with a side salad or in a roll with salad. Serve immediately.
