Orange chicken

Prepa­ra­tion: 15 min­utes Cook­ing: 50 min­utes Serves: 6 In­gre­di­ents 1 orange, peeled, seg­mented 1 onion, diced 2 cloves gar­lic, crushed 2 tbsp pars­ley 1 cup bread­crumbs 1 whole chicken 2 car­rots, sliced 2 big pota­toes, sliced 2 tbsp oil 2 tbsp gravy pow­der


Pre­heat oven to 200C. In a bowl, com­bine orange seg­ments, onion, gar­lic, pars­ley and bread­crumbs. Mix­ture should be­come doughy. Add a lit­tle wa­ter if nec­es­sary. Stuff this mix­ture into chicken cav­ity. Place on to a greased oven tray with sliced car­rot and potato. Brush veg­eta­bles with a lit­tle oil. Bake chicken and veg­eta­bles for 30 min­utes. Turn oven down to 180C. Bake a fur­ther 20 min­utes. Chicken must be cooked all the way through. Trans­fer chicken and veg­eta­bles to a big plate. Mix gravy to a smooth paste with a lit­tle wa­ter. Add one cup of boil­ing wa­ter. Mix well to make a thick gravy. Pour into the roast­ing pan and com­bine well with juices from chicken. Cut chicken into pieces. Serve on to plates with a se­lec­tion of veg­eta­bles. Pour gravy over just be­fore serv­ing.
