Preparation: 15 minutes Cooking: 50 minutes Serves: 6 Ingredients 1 orange, peeled, segmented 1 onion, diced 2 cloves garlic, crushed 2 tbsp parsley 1 cup breadcrumbs 1 whole chicken 2 carrots, sliced 2 big potatoes, sliced 2 tbsp oil 2 tbsp gravy powder
Preheat oven to 200C. In a bowl, combine orange segments, onion, garlic, parsley and breadcrumbs. Mixture should become doughy. Add a little water if necessary. Stuff this mixture into chicken cavity. Place on to a greased oven tray with sliced carrot and potato. Brush vegetables with a little oil. Bake chicken and vegetables for 30 minutes. Turn oven down to 180C. Bake a further 20 minutes. Chicken must be cooked all the way through. Transfer chicken and vegetables to a big plate. Mix gravy to a smooth paste with a little water. Add one cup of boiling water. Mix well to make a thick gravy. Pour into the roasting pan and combine well with juices from chicken. Cut chicken into pieces. Serve on to plates with a selection of vegetables. Pour gravy over just before serving.
