Prepa­ra­tion: 10 min­utes Cook­ing: 30 min­utes Serves: 4 In­gre­di­ents 4 skin­less chicken Mary­land pieces 2 tbsp Di­jon mus­tard Juice and grated rind of 1 lime 2 tbsp chopped fresh herbs 4 toma­toes, sliced 2 onions, thinly sliced Pota­toes and beans to serve

Method

Ar­range onion and tomato slices in big, oiled oven-proof dish. Ar­range chicken pieces over. Com­bine mus­tard, lime juice, rind and herbs. Spread mix­ture over chicken. Cover. Bake at 200C for 30 min­utes or un­til chicken is cooked. Serve with oven-baked potato wedges and steamed green beans.
