Arrange onion and tomato slices in big, oiled oven-proof dish. Arrange chicken pieces over. Combine mustard, lime juice, rind and herbs. Spread mixture over chicken. Cover. Bake at 200C for 30 minutes or until chicken is cooked. Serve with oven-baked potato wedges and steamed green beans.
