Red onion mar­malade

Prepa­ra­tion: 10 min­utes Cook­ing: 35 min­utes Serves: 6-8 In­gre­di­ents

4 red onions, cut into thin wedges 2 tbsp olive oil 2 gar­lic cloves, chopped 2 tsp soy sauce 2 tbsp brown su­gar

1⁄2 tsp dried thyme or 1 tbsp fresh chopped thyme 2 tbsp vine­gar

Method

Place onion, olive oil, gar­lic and soy sauce into a saucepan. Cook, un­cov­ered, over low heat for about 25 min­utes or un­til ten­der. Stir oc­ca­sion­ally to stop stick­ing. Add su­gar and thyme. In­crease the heat, but do not boil. Cook, un­cov­ered, for about 10 min­utes. Stir of­ten to pre­vent stick­ing. Stir in vine­gar. Re­move from heat. Cool. Serve in a dec­o­ra­tive bowl with French stick slices or pita bread wedges, to ac­com­pany a cheese­board. Ac­com­pany with fresh cru­dites such as sliced con­ti­nen­tal cu­cum­ber, sliced red cap­sicum, cherry toma­toes and snow peas.
