Red onion marmalade
Preparation: 10 minutes Cooking: 35 minutes Serves: 6-8 Ingredients
4 red onions, cut into thin wedges 2 tbsp olive oil 2 garlic cloves, chopped 2 tsp soy sauce 2 tbsp brown sugar
1⁄2 tsp dried thyme or 1 tbsp fresh chopped thyme 2 tbsp vinegar
Place onion, olive oil, garlic and soy sauce into a saucepan. Cook, uncovered, over low heat for about 25 minutes or until tender. Stir occasionally to stop sticking. Add sugar and thyme. Increase the heat, but do not boil. Cook, uncovered, for about 10 minutes. Stir often to prevent sticking. Stir in vinegar. Remove from heat. Cool. Serve in a decorative bowl with French stick slices or pita bread wedges, to accompany a cheeseboard. Accompany with fresh crudites such as sliced continental cucumber, sliced red capsicum, cherry tomatoes and snow peas.
