Or­ange caramel ap­ples

Prepa­ra­tion: 10 min­utes Cook­ing: 15 min­utes Serves: 4–6 In­gre­di­ents

2 tbsp but­ter or mar­garine 4 ap­ples, peeled and cut down­wards into 5mm slices 2 tbsp brown su­gar 1 tsp cin­na­mon Juice and finely shred­ded rind of 1 or­ange

1⁄2 cup pecans, chopped roughly Ice-cream to serve


Heat 1 tbsp but­ter or mar­garine in a heavy fry­ing pan. Add a few ap­ple slices at a time, cook­ing un­til they are golden brown. Re­move and keep warm. Add re­main­ing tbsp but­ter to pan, along with brown su­gar, or­ange juice and rind and pecans. Serve warm ap­ples and ice-cream with hot sauce poured over.
