Creamy, fruity pear cups
Preparation: 15 minutes Cooling: Overnight Serves: 4 Ingredients 250g ricotta cheese 1⁄2 cup light sour cream 1⁄4 cup honey 1 tsp ground ginger 4 ripe pears, peeled, cored, diced 1⁄4 cup lemon juice 1 tbsp gelatine, dissolved in ¼ cup boiling water 2 egg whites, whipped until soft peaks form Fresh mint leaves and strawberries slices to garnish
Combine ricotta, light sour cream, honey, pears, ginger and lemon juice in a food processor. Process until smooth. With motor running, add gelatine and process to combine. Fold one-third of the creamy pear mixture into whipped egg whites. Repeat with remaining pear mixture. Pour into four one-cup sized ramekins or individual serving bowls. Place in refrigerator overnight before serving. Serve decorated with slices of fresh fruit and fresh mint leaves.
