Creamy, fruity pear cups

Prepa­ra­tion: 15 min­utes Cool­ing: Overnight Serves: 4 In­gre­di­ents 250g ri­cotta cheese 1⁄2 cup light sour cream 1⁄4 cup honey 1 tsp ground gin­ger 4 ripe pears, peeled, cored, diced 1⁄4 cup lemon juice 1 tbsp gela­tine, dis­solved in ¼ cup boil­ing wa­ter 2 egg whites, whipped un­til soft peaks form Fresh mint leaves and straw­ber­ries slices to gar­nish


Com­bine ri­cotta, light sour cream, honey, pears, gin­ger and lemon juice in a food pro­ces­sor. Process un­til smooth. With mo­tor run­ning, add gela­tine and process to com­bine. Fold one-third of the creamy pear mix­ture into whipped egg whites. Re­peat with re­main­ing pear mix­ture. Pour into four one-cup sized ramekins or in­di­vid­ual serv­ing bowls. Place in re­frig­er­a­tor overnight be­fore serv­ing. Serve dec­o­rated with slices of fresh fruit and fresh mint leaves.
