Beet­root and orange loaf

Prepa­ra­tion: 20 min­utes Cook­ing: 1 hour Serves: 4-6 In­gre­di­ents 3 medium size fresh beet­root, peeled 2 or­anges, juice and rind grated 1 cup self-rais­ing flour sifted 1 cup whole­meal self-rais­ing flour sifted ½ cup co­coa sifted ½ cup su­gar ¼ cup veg­etable oil 1 egg, lightly beaten 1⁄2 tea­spoon vanilla essence


Steam or mi­crowave beet­root for 5 min­utes or un­til ten­der. Stand aside to cool. Puree in a food pro­ces­sor or blen­der. Com­bine flours, co­coa and su­gar in a large bowl. Mix the re­main­ing in­gre­di­ents with the pureed beet­root. Stir thor­oughly into dried in­gre­di­ents. Pour into a lightly greased and lined loaf tin. Bake at 180C for 60 min­utes or un­til cooked. Turn out on to a wire rack to cool.
