Beetroot and orange loaf
Preparation: 20 minutes Cooking: 1 hour Serves: 4-6 Ingredients 3 medium size fresh beetroot, peeled 2 oranges, juice and rind grated 1 cup self-raising flour sifted 1 cup wholemeal self-raising flour sifted ½ cup cocoa sifted ½ cup sugar ¼ cup vegetable oil 1 egg, lightly beaten 1⁄2 teaspoon vanilla essence
Steam or microwave beetroot for 5 minutes or until tender. Stand aside to cool. Puree in a food processor or blender. Combine flours, cocoa and sugar in a large bowl. Mix the remaining ingredients with the pureed beetroot. Stir thoroughly into dried ingredients. Pour into a lightly greased and lined loaf tin. Bake at 180C for 60 minutes or until cooked. Turn out on to a wire rack to cool.
