1⁄4 cup flour 1 zucchini, thinly sliced 1 red capsicum, chopped 2 tomatoes, chopped 2 tbsp chopped fresh basil
1⁄2 cup grated cheese Method Preheat oven to 220°C. Coat a pizza pan with olive oil. Combine potatoes, onion, eggs and flour in a large bowl. Mix well and press onto the pizza pan. Cook for 20 minutes. Grill for a further 5 minutes or until golden. Toss zucchini, capsicum, tomatoes and basil. Spread half the vegetable mixture over the potato crust. Evenly sprinkle cheese. Top with remaining vegetable mixture. Place back in oven for 10 minutes or until cheese melts. Slice into wedges.
