Prepa­ra­tion: 15 min­utes Cook­ing: 35 min­utes Serves: 4 Inge­di­ents 4 pota­toes, peeled and grated 1 onion, finely chopped 2 eggs, lightly beaten

1⁄4 cup flour 1 zuc­chini, thinly sliced 1 red cap­sicum, chopped 2 toma­toes, chopped 2 tbsp chopped fresh basil

1⁄2 cup grated cheese Method Pre­heat oven to 220°C. Coat a pizza pan with olive oil. Com­bine pota­toes, onion, eggs and flour in a large bowl. Mix well and press onto the pizza pan. Cook for 20 min­utes. Grill for a fur­ther 5 min­utes or un­til golden. Toss zuc­chini, cap­sicum, toma­toes and basil. Spread half the veg­etable mix­ture over the po­tato crust. Evenly sprin­kle cheese. Top with re­main­ing veg­etable mix­ture. Place back in oven for 10 min­utes or un­til cheese melts. Slice into wedges.
