Ap­ples in grape­fruit syrup

4 crisp red ap­ples, peeled halved and cored 1 litre fresh grape­fruit juice (5 grape­fruit) 1 cup of sugar Seg­ments of grape­fruit to gar­nish Mint to gar­nish


Juice enough grape­fruit to pro­duce a litre of juice (ap­prox­i­mately 5). Com­bine juice, sugar and ap­ple halves. Bring to the boil, and turn down to a gen­tle heat. Cover loosely and sim­mer over a gen­tle heat for 20-30 min­utes un­til ap­ples are ten­der. Cool to room tem­per­a­ture and re­frig­er­ate. To serve, ar­range poached ap­ple on to serv­ing plates, spoon over syrup and serve with grape­fruit seg­ments. Take the hassle out of a din­ner party and pre-pre­pare.
