Apples in grapefruit syrup
Preparation: 15 minutes Cooking: 30 minutes Serves: 4
4 crisp red apples, peeled halved and cored 1 litre fresh grapefruit juice (5 grapefruit) 1 cup of sugar Segments of grapefruit to garnish Mint to garnish
Juice enough grapefruit to produce a litre of juice (approximately 5). Combine juice, sugar and apple halves. Bring to the boil, and turn down to a gentle heat. Cover loosely and simmer over a gentle heat for 20-30 minutes until apples are tender. Cool to room temperature and refrigerate. To serve, arrange poached apple on to serving plates, spoon over syrup and serve with grapefruit segments. Take the hassle out of a dinner party and pre-prepare.
