Veg­etable frit­tata bake

Prepa­ra­tion: 15 min­utes Cooking: 30 min­utes Serves: 4 Ingredients 2 sweet pota­toes, peeled, sliced 2 tbsp but­ter 2 cloves gar­lic, crushed 3 eggs, lightly beaten 1⁄2 red cap­sicum, diced 1⁄2 green cap­sicum, diced 3 spring onions, sliced 5 mush­rooms, thinly sliced

1⁄2 cup grated cheese Salt and pep­per to taste


Mi­crowave sweet pota­toes for 6-8 min­utes or un­til ten­der. Mash well. Mix in but­ter and gar­lic. Add lightly beaten eggs. Stir un­til com­bined. Fold in diced cap­sicum, spring onions, mush­rooms and cheese. Sea­son to taste with salt and pep­per. Pour into a greased rec­tan­gu­lar tin. Bake at 180C for 25 min­utes or un­til golden. Slice into squares or fin­gers and serve on plat­ter.
