Vegetable frittata bake
Preparation: 15 minutes Cooking: 30 minutes Serves: 4 Ingredients 2 sweet potatoes, peeled, sliced 2 tbsp butter 2 cloves garlic, crushed 3 eggs, lightly beaten 1⁄2 red capsicum, diced 1⁄2 green capsicum, diced 3 spring onions, sliced 5 mushrooms, thinly sliced
1⁄2 cup grated cheese Salt and pepper to taste
Microwave sweet potatoes for 6-8 minutes or until tender. Mash well. Mix in butter and garlic. Add lightly beaten eggs. Stir until combined. Fold in diced capsicum, spring onions, mushrooms and cheese. Season to taste with salt and pepper. Pour into a greased rectangular tin. Bake at 180C for 25 minutes or until golden. Slice into squares or fingers and serve on platter.
