Leaf salad with mango, avocado and pear
Preparation: 12 minutes
2 avocados, sliced 1 mango, large, chopped into pieces 1 pear, sliced selection of salad greens, 1 cup bean sprouts 1⁄2 cup mushrooms, thinly sliced Prawns, smoked salmon or cold cooked turkey, or 1⁄2 cup pecan or macadamia nuts, toasted Dressing: 6 tbsp oil 3 tsp red wine vinegar or raspberry vinegar 2 tsp wholegrain mustard 2 tsp honey salt and pepper 1 tsp mint chopped
Place the salad leaves and bean sprouts on to a platter. Mix salad dressing ingredients together. Arrange mangos, avocado, mushrooms, pear and seafood, turkey or ham and pour over the dressing. Sprinkle with the roasted nuts.
