Leaf salad with mango, av­o­cado and pear

In­gre­di­ents

2 av­o­ca­dos, sliced 1 mango, large, chopped into pieces 1 pear, sliced selection of salad greens, 1 cup bean sprouts 1⁄2 cup mush­rooms, thinly sliced Prawns, smoked salmon or cold cooked turkey, or 1⁄2 cup pecan or macadamia nuts, toasted Dress­ing: 6 tbsp oil 3 tsp red wine vine­gar or rasp­berry vine­gar 2 tsp whole­grain mus­tard 2 tsp honey salt and pep­per 1 tsp mint chopped

Method

Place the salad leaves and bean sprouts on to a plat­ter. Mix salad dress­ing in­gre­di­ents to­gether. Ar­range man­gos, av­o­cado, mush­rooms, pear and seafood, turkey or ham and pour over the dress­ing. Sprin­kle with the roasted nuts.
