1 tbsp canola oil 2 pears, cored and sliced 1⁄2 cup pecans, halved 2 tbsp lemon juice Mixed salad leaves 2 av­o­ca­dos, peeled and sliced Ri­cotta cheese to serve

Method

Heat oil in a fry­ing pan. Add pear slices and pecan halves. Cook, stir­ring, un­til golden. Re­move from pan and set aside. Add lemon juice to pan. Mix well. Ar­range mixed salad leaves on in­di­vid­ual serv­ing plates. Top with slices of av­o­cado, pears and pecans. Pour over warm lemon dress­ing. Serve with fresh ri­cotta cheese.
