REFRESHING DISHES FOR HOT DAYS
Preparation: 15 minutes
1 tbsp canola oil 2 pears, cored and sliced 1⁄2 cup pecans, halved 2 tbsp lemon juice Mixed salad leaves 2 avocados, peeled and sliced Ricotta cheese to serve
Heat oil in a frying pan. Add pear slices and pecan halves. Cook, stirring, until golden. Remove from pan and set aside. Add lemon juice to pan. Mix well. Arrange mixed salad leaves on individual serving plates. Top with slices of avocado, pears and pecans. Pour over warm lemon dressing. Serve with fresh ricotta cheese.
