Ba­nana pe­can bread for af­ter­noon tea

2 ½ cups of self-rais­ing flour

1⁄3 cup of caster sugar

1 ½ cups of des­ic­cated co­conut

½ cup of chopped pecans

½ cup of whole pecans, and ex­tra for dec­o­ra­tion

3 ba­nanas, 2 chopped

2 eggs, lightly beaten 300ml of milk

60g of but­ter, melted


Sift flour into bowl, add sugar, co­conut and chopped pecans. Stir. Com­bine chopped ba­nanas, eggs, milk and but­ter in another bowl. Fold into dry in­gre­di­ents, a lit­tle at a time, un­til mix is smooth. Pour into a lightly greased loaf tin. Dec­o­rate with sliced ba­nana and pecans. Bake about 11⁄4 hour in a 180C oven.
