Spicy avocado and mango salsa
Preparation: 10 minutes Serves: 4
3 Hass avocados 1 mango 2 limes, juiced and zested
1⁄4 cup spring onion, finely chopped 1⁄2 cup grape tomatoes, halved 1⁄2 cup coriander, leaves picked 1 long red chilli, seeded and finely diced
Peel, seed and finely dice avocado and mango. Combine in bowl with juice and zest of limes, spring onion, grape tomatoes, coriander and chilli. Season to taste with salt and pepper and serve alongside a selection of fresh seafood.
