Chilli pasta sauce
Preparation: 15 minutes Cooking: 30 minutes Serves: 4 Ingredients
1 tbsp oil 2 onions, chopped 2 cloves garlic, crushed 500g lean beef mince 6 ripe tomatoes 3 tbsp tomato paste 1 red chilli, finely chopped 2 cups sliced mushrooms 2 cups red kidney beans 2 tbsp chopped fresh parsley
Saute onion and garlic in oil until onion is soft. Add mince, stirring occasionally until mince has browned. Add tomatoes, tomato paste, mushrooms and chilli. Bring to the boil. Reduce heat and simmer uncovered until sauce is thick, about 20 minutes. Add beans and parsley. Heat through. Serve over hot cooked pasta.
