Thai beef salad
Preparation 10 minutes Cooking 10 minutes Serves 4 Ingredients
1⁄2 cup each chopped fresh mint, coriander and basil 1 red onion, sliced 2 Lebanese cucumbers, seeds removed and thickly sliced 1 red capsicum, diced 500g rump steak 1 tbsp sweet chilli sauce (or to taste) Chopped fresh chilli to taste
1 tbsp peanut oil 1 tbsp fish sauce Grated rind and juice of 1 lime
For dressing, combine all ingredients in a jar. Shake well. Arrange salad ingredients in a large bowl. Grill or barbecue steak to taste. Slice diagonally into thin slices. Add meat and dressing to salad. Toss gently. Serve immediately.
