Zesty berry br­uschetta

Prepa­ra­tion: 5 min­utes Serves: 2-4 In­gre­di­ents

4 thick slices of fruit bread ½ cup fresh ri­cotta cheese ½ tsp lemon zest 1 tsp honey 1 pun­net of straw­ber­ries, washed, hulled, halved 1 pun­net of blue­ber­ries, washed Choco­late sauce to serve Mint leaves to gar­nish

Method

Lightly toast fruit loaf. Place on in­di­vid­ual serv­ing plates. Com­bine ri­cotta cheese, lemon zest and honey. Di­vide the mix­ture evenly be­tween the four slices of fruit loaf. Top slices with straw­ber­ries and blue­ber­ries. Driz­zle with a lit­tle choco­late sauce. Gar­nish with mint leaves. Serve im­me­di­ately with more ri­cotta mix­ture if de­sired. NOTE: Diced peaches or nec­tarines can be used in place of berries.
