Zesty berry bruschetta
Preparation: 5 minutes Serves: 2-4 Ingredients
4 thick slices of fruit bread ½ cup fresh ricotta cheese ½ tsp lemon zest 1 tsp honey 1 punnet of strawberries, washed, hulled, halved 1 punnet of blueberries, washed Chocolate sauce to serve Mint leaves to garnish
Lightly toast fruit loaf. Place on individual serving plates. Combine ricotta cheese, lemon zest and honey. Divide the mixture evenly between the four slices of fruit loaf. Top slices with strawberries and blueberries. Drizzle with a little chocolate sauce. Garnish with mint leaves. Serve immediately with more ricotta mixture if desired. NOTE: Diced peaches or nectarines can be used in place of berries.
