Lamb with plum sauce, as­para­gus

Prepa­ra­tion: 5 min­utes Cook­ing: 15 min­utes Serves: 4 In­gre­di­ents

1 tbsp olive oil 1 onion, cut into wedges 1 red cap­sicum, cut into thin strips 400g lamb stir-fry strips 1⁄4 cup plum sauce 1⁄4 cup lemon juice 1 tsp cumin 2 cups chopped as­para­gus 1 cup bean shoots Rice or noo­dles to serve

Method

Heat oil in wok or fry­ing pan. Add onion and red cap­sicum. Stir-fry for 1-2 min­utes. Add lamb. Stir-fry for 3-5 min­utes or un­til browned. Add plum sauce, lemon juice, cumin, as­para­gus and bean shoots. Stir con­tin­u­ously for 3 min­utes. Serve with cooked rice or noo­dles.
