Lamb with plum sauce, asparagus
Preparation: 5 minutes Cooking: 15 minutes Serves: 4 Ingredients
1 tbsp olive oil 1 onion, cut into wedges 1 red capsicum, cut into thin strips 400g lamb stir-fry strips 1⁄4 cup plum sauce 1⁄4 cup lemon juice 1 tsp cumin 2 cups chopped asparagus 1 cup bean shoots Rice or noodles to serve
Heat oil in wok or frying pan. Add onion and red capsicum. Stir-fry for 1-2 minutes. Add lamb. Stir-fry for 3-5 minutes or until browned. Add plum sauce, lemon juice, cumin, asparagus and bean shoots. Stir continuously for 3 minutes. Serve with cooked rice or noodles.
