400g cous­cous

1⁄2 cup fresh lemon juice

1⁄4 cup olive oil

3 nec­tarines, chopped

1 green cap­sicum, cut into strips

1 radic­chio, torn into small pieces

4 spring onions, sliced

1⁄2 cup toasted sliv­ered al­monds

1⁄2 cup finely chopped basil

Freshly ground black pep­per


Cook cous­cous ac­cord­ing to di­rec­tions on packet. Com­bine lemon juice and olive oil. Place cous­cous, nec­tarines, cap­sicum, radic­chio, spring onions, al­monds and basil in a large bowl. Pour over lemon juice dress­ing. Toss gen­tly to com­bine. Serve with bar­be­cued meats.
