Pork with stone fruit salsa
Preparation: 10 minutes Cooking: 20 minutes Serves: 4 Ingredients 4 pork medallions 1 tbsp olive oil 2 tsp Dijon mustard 2 medium peaches, diced 2 medium nectarines, diced 1 red onion, finely diced 1 tsp grated fresh ginger 1 red chilli, finely diced (optional) Loose lettuce leaves to serve 4 small potatoes, cooked in jackets Method Grill pork for 5 minutes each side. While cooking, brush pork with combined oil and mustard. Set aside to rest for 10 minutes. Meanwhile, combine peaches, nectarines, onion, ginger and chilli. Line plates with loose lettuce. Add pork and spoon over salsa. Serve with jacket potatoes.
