Pork with stone fruit salsa

Prepa­ra­tion: 10 min­utes Cook­ing: 20 min­utes Serves: 4 In­gre­di­ents 4 pork medal­lions 1 tbsp olive oil 2 tsp Di­jon mus­tard 2 medium peaches, diced 2 medium nec­tarines, diced 1 red onion, finely diced 1 tsp grated fresh gin­ger 1 red chilli, finely diced (op­tional) Loose let­tuce leaves to serve 4 small pota­toes, cooked in jack­ets Method Grill pork for 5 min­utes each side. While cook­ing, brush pork with com­bined oil and mus­tard. Set aside to rest for 10 min­utes. Mean­while, com­bine peaches, nec­tarines, onion, gin­ger and chilli. Line plates with loose let­tuce. Add pork and spoon over salsa. Serve with jacket pota­toes.
