Berry and grape dessert

Prepa­ra­tion: 10 min­utes Cook­ing: 10 min­utes Serves: 4 In­gre­di­ents 2 large peaches, peeled and diced 1 cup flame seed­less grapes 1 pun­net straw­ber­ries, hulled and halved 1 tbsp cas­tor su­gar

1⁄2 cup fresh or­ange juice 1 tbsp brandy 200 g fresh ri­cotta cheese 1 tsp vanilla essence Pulp of 2 pas­sion­fruit Method Place peach, grapes and straw­berry slices into a large bowl. Sprin­kle with su­gar. Com­bine or­ange juice and brandy in a sep­a­rate bowl. Pour over fruit. Stand for at least 10 min­utes in re­frig­er­a­tor. Stir oc­ca­sion­ally. In a small bowl com­bine ri­cotta, vanilla and pas­sion­fruit. Mix well. To serve, place fruit slices into serv­ing dishes or glasses. Top with pas­sion­fruit ri­cotta mix­ture.
