Berry and grape dessert
Preparation: 10 minutes Cooking: 10 minutes Serves: 4 Ingredients 2 large peaches, peeled and diced 1 cup flame seedless grapes 1 punnet strawberries, hulled and halved 1 tbsp castor sugar
1⁄2 cup fresh orange juice 1 tbsp brandy 200 g fresh ricotta cheese 1 tsp vanilla essence Pulp of 2 passionfruit Method Place peach, grapes and strawberry slices into a large bowl. Sprinkle with sugar. Combine orange juice and brandy in a separate bowl. Pour over fruit. Stand for at least 10 minutes in refrigerator. Stir occasionally. In a small bowl combine ricotta, vanilla and passionfruit. Mix well. To serve, place fruit slices into serving dishes or glasses. Top with passionfruit ricotta mixture.
