Summer avocado and tomato soup
Preparation: 10 minutes Cooking: nil Serves: 4-6 Ingredients 4 ripe tomatoes, chopped 1 red chilli, deseeded, sliced finely 1 onion, chopped 2 Lebanese cucumbers, peeled, chopped 1 pear, peeled, quartered, core removed 2 avocados, skin and seed removed 3 cups tomato juice
1⁄4 cup lemon juice 2 tbsp freshly chopped coriander or parsley Freshly ground black pepper
Place tomatoes, chilli, onion, pear, cucumber and an avocado in a food processor. Process until smooth. Place mixture in a large bowl. Stir in tomato juice, lemon juice and coriander or parsley. Add pepper to taste. Serve soup in individual bowls, topped with the remaining chopped avocado and extra chopped herbs.
