Sum­mer av­o­cado and tomato soup

Prepa­ra­tion: 10 min­utes Cook­ing: nil Serves: 4-6 In­gre­di­ents 4 ripe toma­toes, chopped 1 red chilli, de­seeded, sliced finely 1 onion, chopped 2 Le­banese cu­cum­bers, peeled, chopped 1 pear, peeled, quar­tered, core re­moved 2 av­o­ca­dos, skin and seed re­moved 3 cups tomato juice

1⁄4 cup lemon juice 2 tbsp freshly chopped co­rian­der or parsley Freshly ground black pep­per

Method

Place toma­toes, chilli, onion, pear, cu­cum­ber and an av­o­cado in a food pro­ces­sor. Process un­til smooth. Place mix­ture in a large bowl. Stir in tomato juice, lemon juice and co­rian­der or parsley. Add pep­per to taste. Serve soup in in­di­vid­ual bowls, topped with the re­main­ing chopped av­o­cado and ex­tra chopped herbs.
