Crab cakes with salsa
Preparation: 10 minutes Cooking: 20 minutes Serves: 4 Ingredients 1 x 200g crab meat, fresh or tinned 270g sweet corn kernels, fresh or tinned 500g royal blue or ruby lou potatoes, steamed 3 spring onions, chopped 1 tbsp lemon or lime rind 2 eggs, beaten
1⁄3 cup plain flour Olive oil Kiwi fruit and avocado salsa 2 kiwi fruit, chopped 1 avocado, peeled and chopped Sprig mint, chopped finely 1 red chilli, chopped (optional)
1⁄2 lemon or lime juiced
Roughly mash the potatoes and allow to cool. Add the crab meat, corn, spring onions, rind and beaten eggs. Season with salt and pepper. Form into patties of your preferred size. Dust lightly with flour. Preheat frying pan, add oil and add patties. Fry until golden brown then turn and cook of other side. Remove from pan. Serve with the salsa. To make salsa: mix all ingredients and allow to marinate flavours for 10 minutes.
