Crab cakes with salsa

Prepa­ra­tion: 10 min­utes Cook­ing: 20 min­utes Serves: 4 In­gre­di­ents 1 x 200g crab meat, fresh or tinned 270g sweet corn ker­nels, fresh or tinned 500g royal blue or ruby lou pota­toes, steamed 3 spring onions, chopped 1 tbsp lemon or lime rind 2 eggs, beaten

1⁄3 cup plain flour Olive oil Kiwi fruit and av­o­cado salsa 2 kiwi fruit, chopped 1 av­o­cado, peeled and chopped Sprig mint, chopped finely 1 red chilli, chopped (op­tional)

1⁄2 lemon or lime juiced

Method

Roughly mash the pota­toes and al­low to cool. Add the crab meat, corn, spring onions, rind and beaten eggs. Sea­son with salt and pep­per. Form into pat­ties of your pre­ferred size. Dust lightly with flour. Pre­heat fry­ing pan, add oil and add pat­ties. Fry un­til golden brown then turn and cook of other side. Re­move from pan. Serve with the salsa. To make salsa: mix all in­gre­di­ents and al­low to mar­i­nate flavours for 10 min­utes.
