Carrot, pear and ginger loaf with pepitas
Preparation: 10 mins Cooking: 1 hour Serves 6 Ingredients 2 cup self raising flour 1 tspn bicarbonate of soda 1 tspn allspice 1 cup brown sugar 1 cup finely grated carrot 2 pears, peeled, cored, diced finely 1⁄2 cup raisins, chopped 1⁄2 cup finely chopped glace ginger 1⁄4 cup oil 1⁄4 cup low-fat milk 2 eggs, lightly beaten 1 tbsp pepitas (optional) Method Sift flour, bicarbonate of soda and allspice into a bowl. Stir in sugar, carrot, pear, raisins, ginger and pecans. Stir in oil, milk and eggs. Beat well to mix ingredients thoroughly. Pour into a lightly oiled loaf pan. Spinkle pepitas on top. Bake at 170C for about 1 hour. Stand for five minutes before turning onto wire rack to cool.
