Car­rot, pear and ginger loaf with pepi­tas

Prepa­ra­tion: 10 mins Cook­ing: 1 hour Serves 6 In­gre­di­ents 2 cup self rais­ing flour 1 tspn bi­car­bon­ate of soda 1 tspn all­spice 1 cup brown sugar 1 cup finely grated car­rot 2 pears, peeled, cored, diced finely 1⁄2 cup raisins, chopped 1⁄2 cup finely chopped glace ginger 1⁄4 cup oil 1⁄4 cup low-fat milk 2 eggs, lightly beaten 1 tbsp pepi­tas (op­tional) Method Sift flour, bi­car­bon­ate of soda and all­spice into a bowl. Stir in sugar, car­rot, pear, raisins, ginger and pecans. Stir in oil, milk and eggs. Beat well to mix in­gre­di­ents thor­oughly. Pour into a lightly oiled loaf pan. Spin­kle pepi­tas on top. Bake at 170C for about 1 hour. Stand for five min­utes be­fore turn­ing onto wire rack to cool.
