Pork meatballs with rice
Preparation: 15 minutes Cooking: 25 minutes Serves 4 Ingredients 2 cups long grain rice 500g pork mince 200g button mushrooms, minced in food processor
1⁄2 tspn cumin 1 tsp coriander 1 onion, finely chopped
1⁄3 cup finely chopped parsley Freshly ground black pepper, to taste 1 tbsp oil 1 garlic clove, crushed 4 ripe tomatoes, chopped
1⁄2 tspn cumin, extra 2 tbsp lemon juice 1 tsp grated lemon rind Method Cook rice in boiling salted water. Combine mince, mushrooms, spices, onion, half the parsley and pepper in a bowl. Mix. Roll mixture into small balls. Heat oil in frying pan. Add meatballs. Cook for three minutes or until well browned. Remove from pan. Drain on paper towels. Add garlic to pan. Cook for about 30 seconds. Add tomatoes and extra cumin. Simmer for about four minutes. Add rice to pan and stir lemon juice, rind and remaining parsley through. Serve hot meatballs on a bed of lemon rice. Accompany with a fresh green salad.
