Pork meat­balls with rice

Prepa­ra­tion: 15 min­utes Cook­ing: 25 min­utes Serves 4 In­gre­di­ents 2 cups long grain rice 500g pork mince 200g but­ton mush­rooms, minced in food pro­ces­sor

1⁄2 tspn cu­min 1 tsp co­rian­der 1 onion, finely chopped

1⁄3 cup finely chopped pars­ley Freshly ground black pep­per, to taste 1 tbsp oil 1 gar­lic clove, crushed 4 ripe toma­toes, chopped

1⁄2 tspn cu­min, ex­tra 2 tbsp lemon juice 1 tsp grated lemon rind Method Cook rice in boil­ing salted wa­ter. Com­bine mince, mush­rooms, spices, onion, half the pars­ley and pep­per in a bowl. Mix. Roll mix­ture into small balls. Heat oil in fry­ing pan. Add meat­balls. Cook for three min­utes or un­til well browned. Re­move from pan. Drain on pa­per tow­els. Add gar­lic to pan. Cook for about 30 sec­onds. Add toma­toes and ex­tra cu­min. Sim­mer for about four min­utes. Add rice to pan and stir lemon juice, rind and re­main­ing pars­ley through. Serve hot meat­balls on a bed of lemon rice. Ac­com­pany with a fresh green salad.
