Rhubarb and apple muffins
Preparation: 10 minutes Cooking: 25 minutes Serves 12 Ingredients 1 egg, lightly beaten 1⁄4 cup orange juice 3⁄4 cup milk 1 stick rhubarb, sliced 1 apple, peeled and grated 2 tbsp oil
1⁄4 cup raw sugar 1 cup SR flour 1 cup wholemeal SR flour
1⁄2 tsp cinnamon Method Combine egg, juice, milk, rhubarb, apple, oil and sugar. Sift flours and cinnamon into a bowl. Fold in wet ingredients. Place in lightly greased muffin tins. Bake at 200C for 25 minutes. Turn onto a wire rack and serve warm.
