Rhubarb and ap­ple muffins

Prepa­ra­tion: 10 min­utes Cook­ing: 25 min­utes Serves 12 In­gre­di­ents 1 egg, lightly beaten 1⁄4 cup or­ange juice 3⁄4 cup milk 1 stick rhubarb, sliced 1 ap­ple, peeled and grated 2 tbsp oil

1⁄4 cup raw sugar 1 cup SR flour 1 cup whole­meal SR flour

1⁄2 tsp cin­na­mon Method Com­bine egg, juice, milk, rhubarb, ap­ple, oil and sugar. Sift flours and cin­na­mon into a bowl. Fold in wet in­gre­di­ents. Place in lightly greased muf­fin tins. Bake at 200C for 25 min­utes. Turn onto a wire rack and serve warm.
