Kiwifruit and rockmelon dessert skewers with honey
Preparation: 5 minutes Cooking: 30 minutes to soak Serves: 4 Ingredients 2 tsp honey 1 tbsp sweet white wine 2 tsp grated ginger 6 kiwifruit, peeled and sliced 1 rockmelon, peeled and diced Yoghurt or ricotta, to serve Flaked almonds, toasted
Combine honey, wine and ginger in a small bowl. Place kiwifruit and rockmelon in a bowl. Drizzle honey mixture over fruit. Cover and refrigerate for 30 minutes. Thread fruit on skewers. Serve chilled with yoghurt or ricotta blended with orange juice and honey. Top with almonds just before serving.
