Ap­ple and pear pan­cakes

Serves: 4 In­gre­di­ents

1 cup whole­meal flour

1 cup milk

2 eggs, sep­a­rated

1 tsp vanilla essence

1 tbsp lemon juice

1 pear, grated

1 ap­ple, grated

1 ap­ple and 1 pear ex­tra to serve


Place flour, milk, egg yolks, vanilla and lemon juice into a bowl. Whisk or mix un­til smooth. Al­low to stand for about 1 hour in re­frig­er­a­tor. Add ap­ple and pear to pan­cake mix­ture. Beat egg whites un­til stiff. Fold into pan­cake mix­ture. Heat a lightly greased fry­ing pan. Pour about ¼ cup of pan­cake mix­ture into pan. Cook un­til golden brown. Turn and cook other side. Re­peat un­til all mix­ture is used. Serve with fresh slices of ap­ple and pear and low-fat yo­ghurt.
