Prepa­ra­tion: 15 min­utes Cook­ing: 15 min­utes Serves: 4 In­gre­di­ents 5 medium car­rots, peeled and sliced di­ag­o­nally 1 tbsp honey 2 tbsp lemon juice 2 tsp curry paste or pow­der 2 tbsp veg­etable oil

1⁄2 tbsp brown sugar 2 tbsp raisins Co­rian­der or pars­ley to serve Method Mi­crowave or steam car­rots un­til al­most ten­der. Com­bine honey, lemon juice and curry in a small bowl. Heat oil in a large pan. Add car­rot pieces. Saute for 2 min­utes. Sprin­kle with brown sugar, add raisins and cook for two min­utes. Add honey mix­ture and cook un­til coated. Serve sprin­kled with co­rian­der or pars­ley leaves.
