1⁄2 tbsp brown sugar 2 tbsp raisins Coriander or parsley to serve Method Microwave or steam carrots until almost tender. Combine honey, lemon juice and curry in a small bowl. Heat oil in a large pan. Add carrot pieces. Saute for 2 minutes. Sprinkle with brown sugar, add raisins and cook for two minutes. Add honey mixture and cook until coated. Serve sprinkled with coriander or parsley leaves.
