Sat­is­fy­ing chicken and av­o­cado bur­ri­tos

Prepa­ra­tion 10 min­utes Cook­ing 15 min­utes Serves 4


1 tbsp olive oil 2 cloves gar­lic, crushed 400g stir-fry chicken strips 1 bunch spring onions, sliced 1 red cap­sicum, diced 200g but­ton mush­rooms, sliced 2 firm ripe to­ma­toes, diced 2 tsp ground cumin 1 tbsp ground co­rian­der 8 bur­ri­tos or lavash bread 2 av­o­ca­dos, peeled and diced Re­duced fat yo­ghurt, to serve


Heat oil in a large fry­ing pan. Add gar­lic and chicken. Cook over medium heat for about 5 min­utes. Stir in spring onions, cap­sicum, mush­rooms, to­ma­toes and spices. Cook gen­tly for 10 min­utes. Mean­while, heat bur­ri­tos ac­cord­ing to di­rec­tions on the packet. Add av­o­cado to chicken mix­ture. Di­vide mix­ture into eight por­tions. Spoon mix­ture on to each bur­rito. Roll up and se­cure with a tooth­pick. Serve bur­ri­tos while warm with a dol­lop of re­duced fat yo­ghurt.
