Trop­i­cal pro­duce earns ac­co­lades

HAR­RISONS Restau­rant owner Spencer Pa­trick has been an­nounced as an Aus­tralian Coun­try Style mag­a­zine chef of the year fi­nal­ist.

Spencer is one of five Queens­land chefs to make the fi­nals, with his Frenchin­spired tech­nique and use of the best in trop­i­cal pro­duce earn­ing him the hon­our.

“I’m ex­tremely proud for our team be­cause with­out them it would be im­pos­si­ble to do any­thing, and also we are big sup­port­ers of us­ing the best pro­duce we can get from our lo­cal farm­ers,” he said.

“A big part of what we are do­ing at Har­risons is try­ing to be in­no­va­tive with our dishes and keep up with the national food trends.”

The judg­ing cri­te­ria for the awards fo­cused on a chef’s abil­ity to cre­ate an ex­em­plary and en­joy­able din­ing ex­pe­ri­ence that em­braces the “pad­dock to plate phi­los­o­phy” and which pro­vides a show­case for the flavours of the re­gion.

Con­tenders were se­lected from the rec­om­men­da­tions of Coun­try Style read­ers, plus re­spected food writ­ers and crit­ics from across Aus­tralia, with the fi­nal se­lec­tion over­seen by Coun­try Style editor Vic­to­ria Carey and food and wine writer and Coun­try Squire colum­nist Rob In­gram.

The win­ner will an­nounced next month.
