Tropical produce earns accolades
HARRISONS Restaurant owner Spencer Patrick has been announced as an Australian Country Style magazine chef of the year finalist.
Spencer is one of five Queensland chefs to make the finals, with his Frenchinspired technique and use of the best in tropical produce earning him the honour.
“I’m extremely proud for our team because without them it would be impossible to do anything, and also we are big supporters of using the best produce we can get from our local farmers,” he said.
“A big part of what we are doing at Harrisons is trying to be innovative with our dishes and keep up with the national food trends.”
The judging criteria for the awards focused on a chef’s ability to create an exemplary and enjoyable dining experience that embraces the “paddock to plate philosophy” and which provides a showcase for the flavours of the region.
Contenders were selected from the recommendations of Country Style readers, plus respected food writers and critics from across Australia, with the final selection overseen by Country Style editor Victoria Carey and food and wine writer and Country Squire columnist Rob Ingram.
The winner will announced next month.
