For the dressing, heat oil in a small fry pan over medium heat. Add ginger and stir for 30 seconds. Add soy and brown sugar and cook until sugar has dissolved. Add fish sauce and tamarind and cook until syrupy. For the salad, mix all ingredients in a bowl and add dressing. Toss gently and arrange on plate. Garnish with some fennel leaf.
