For the dress­ing, heat oil in a small fry pan over medium heat. Add gin­ger and stir for 30 sec­onds. Add soy and brown sugar and cook un­til sugar has dis­solved. Add fish sauce and tamarind and cook un­til syrupy. For the salad, mix all in­gre­di­ents in a bowl and add dress­ing. Toss gen­tly and ar­range on plate. Gar­nish with some fen­nel leaf. While The Junc­tion Cafe smokes its own trout, it can be pur­chased smoked from your sup­plier and mixed in with the salad.
