Fry off cassava crackers in oil for about 30 seconds or till crispy. Thinly slice some fresh coral trout (Needs to be paper thin) and place in a bowl with 3 tablespoons of salsa and 3 tablespoons of dressing. Let sit for 4-5 minutes to allow the citrus to cook the fish…. Put a dollop of smashed avocado on the cassava cracker. Then put the ceviche mix on top of the avocado… garnish with black sesame and coriander leaves. Lovely!
