Fry off cas­sava crack­ers in oil for about 30 sec­onds or till crispy. Thinly slice some fresh co­ral trout (Needs to be pa­per thin) and place in a bowl with 3 ta­ble­spoons of salsa and 3 ta­ble­spoons of dress­ing. Let sit for 4-5 min­utes to al­low the cit­rus to cook the fish…. Put a dol­lop of smashed av­o­cado on the cas­sava cracker. Then put the ce­viche mix on top of the av­o­cado… gar­nish with black sesame and co­rian­der leaves. Lovely!
