1. Pre­heat oven to 180C. Lightly spray a tray of 6 x 1 cup muf­fin pans with olive oil. 2. Cook noo­dles as di­rected, re­serv­ing the flavour sa­chets. Drain then rinse un­der cold wa­ter. Place in a bowl. 3. Add the re­served flavour sa­chets, grated veg­eta­bles, egg, light sour cream and ham. 4. Spoon equal por­tions in muf­fin pans and top with cheese. 5. Bake for 30-35 min­utes or un­til set.6. Serve warm with veg­etable sticks and tomato salsa. NOTES: This is great for a quick snack or when you are in a hurry. You can also use veg­eta­bles like pump­kin, zuc­chini and car­rot. Prepa­ra­tion: 10 min­utes Cook: 45 min­utes
