Have you no­ticed how co­conut is hav­ing a health moment? There’s ev­ery­thing from co­conut wa­ter as a light al­ter­na­tive to fruit juice, to co­conut oil as an aid for healthy teeth and gums when you ‘pull’ it (swish it round in your mouth.) Now comes co­conut sugar: it doesn’t have the flavour of co­conut, as it’s not made from the fruit, but taken from the sap of the flower buds. But is it any health­ier than cane sugar? Well, it is slightly lower GI, but spoon-for-spoon it has the same kjs as brown sugar.
