This stunningly restored 1830s flour mill sits on the edge of the Tamar River in Launceston’s centre. The breakfast menu is designed around the best Tasmanian produce and features the usual (eggs with tasty sides of thick-cut slab bacon, avocado, haloumi and mushrooms) and the more creative (a pillowy omelette of slow-cooked pork with kimchi, coriander, oyster sauce and bean sprouts). Dip into cinnamon toast with sultanas, cultured butter and cinnamon sugar or rye waffles with poached eggs, cold-smoked Huon salmon, dill cucumber and mustard crème fraîche – perfect with the 2006 Arras Blanc de Blancs.
