At any given time, six fig­ures worth of beef is be­ing held in the restau­rant’s cus­tom-built age­ing fa­cil­i­ties, mak­ing Rock­pool an ob­vi­ous choice for meaty plea­sure. On the menu, wood-grilled steaks are listed by pro­ducer, cut, weight and age­ing time, while cluedup staff hap­pily fill din­ers in on back­sto­ries. David Black­more’s fa­mous Wagyu and Cape Grim beef are menu cor­ner­stones but smaller pro­duc­ers make up the bal­ance of the carte, bring­ing, say, the bright min­er­al­ity of grass-fed Bri­tish White cows reared on Western Aus­tralia’s south coast to the table. Su­pe­rior ren­di­tions of steak­house clas­sics (speck-en­riched mac’n’cheese; mushy peas tricked up with the sur­prise ad­di­tion of an­chovy) are fur­ther wins for eaters.
