At any given time, six figures worth of beef is being held in the restaurant’s custom-built ageing facilities, making Rockpool an obvious choice for meaty pleasure. On the menu, wood-grilled steaks are listed by producer, cut, weight and ageing time, while cluedup staff happily fill diners in on backstories. David Blackmore’s famous Wagyu and Cape Grim beef are menu cornerstones but smaller producers make up the balance of the carte, bringing, say, the bright minerality of grass-fed British White cows reared on Western Australia’s south coast to the table. Superior renditions of steakhouse classics (speck-enriched mac’n’cheese; mushy peas tricked up with the surprise addition of anchovy) are further wins for eaters.
