The ap­point­ment of Robert Marchetti (of Bondi Ice­bergs fame) as QT’s cre­ative food di­rec­tor, and a bold de­sign fea­tur­ing politi­cians’ faces in neon mir­rors or sil­hou­ettes, has made this venue a magnet for ap­pa­ratchiks and gour­mands. At the heart of the glitzy set­ting is the flame grill, with of­fer­ings such as 100 per cent Black An­gus rib eye sourced from the Dar­ling Downs re­gion, with tar­ragon Béar­naise sauce, sweet potato, black sesame and lemon, and the pop­u­lar 400-gram T-bone bis­tecca Fiorentina – pas­ture-fed and dry-aged from Cape Grim in Tas­ma­nia. Add crisp po­lenta fin­gers with whipped herb sour cream or Paris mashed pota­toes.
