Feast on pre­mium lo­cal beef – all of it grass­fed, free-range and hor­mone-free – in­clud­ing slow-cooked Rob­bins Is­land Wagyu rump (which you can en­joy with roasted gar­lic jus and sauer­kraut) or 40-day-aged Cape Grim rib eye on the bone with a sen­sa­tional side of potato galette, Di­jon cream and chives. Sauces range from the clas­sic (truf­fled Béar­naise) to the mod­ern (beet­root rel­ish). Award-win­ning som­me­lier James Welsh’s wine list is on hand, too, fea­tur­ing the 2015 Si­napius Home Vine­yard Chardon­nay from Pipers Brook and the 2013 Holy­man Project X Pinot Noir from the West Ta­mar. And if there’s no room for a star-anise panna cotta, sip on a sin­gle-malt whisky from Tas­ma­nia’s world-renowned Lark Dis­tillery.
