Sauces range from the classic (truffled Béarnaise) to the modern (beetroot relish). Award-winning sommelier James Welsh’s wine list is on hand, too, featuring the 2015 Sinapius Home Vineyard Chardonnay from Pipers Brook and the 2013 Holyman Project X Pinot Noir from the West Tamar.
