Feast on pre­mium lo­cal beef – all of it grass­fed, free-range and hor­mone-free – in­clud­ing slow-cooked Rob­bins Is­land Wagyu rump (which you can en­joy with roasted gar­lic jus and sauer­kraut) or 40-day-aged Cape Grim rib eye on the bone with a sen­sa­tional side of potato galette, Di­jon cream and chives. Sauces range from the clas­sic (truf­fled Béar­naise) to the mod­ern (beet­root rel­ish).
