Whole loins of An­gus beef from around the state are dry-aged off site in a ded­i­cated fa­cil­ity be­fore be­ing bro­ken down and de­ployed in the restau­rant. Chef Nic Lan­caster and his team keep things sim­ple to show off the beef so ex­pect your char­grilled steak to be served with ac­com­pa­ni­ments such as sea­sonal veg and potato purée or pommes Pont Neuf stacked Jenga style. Al­though all steaks are aged for at least 45 days, some cuts are aged for up to twice as long.
