Bistro Mor­gan, Mel­bourne The head chef and founder of Bistro Mor­gan (bistro­mor­gan. com.au) is 16-year-old Mor­gan Hip­worth, who makes more than 1000 of these out-of-this­world cre­ations ev­ery week­end – when he’s not at school.

The Dough­nut Bar, Bris­bane The small team at The Dough­nut Bar (the­do­ugh­nut­bar.com.au) bakes a vast menu of quirky flavours and shapes – dough­nut ice-cream cone, any­one? At the mo­ment, we can’t go past the hand-cut “dough­nut fries”.

The Ital­ian Donut Co. by Lena Lu, Perth Lena’s spe­cialty is small batches of bom­boloni (hand­made Ital­ian dough­nuts) filled and topped with good­ies such as Nutella and hon­ey­comb and salted caramel with Ital­ian cus­tard. Find them at var­i­ous Perth grow­ers’ mar­kets (lenalu.com.au). Ruby G’s Can­teen and Bak­ery, Dar­win Among the many de­li­cious baked goods and more tra­di­tional dough­nuts at Ruby G’s (08 8900 7122) is a genius dough­nut-like hy­brid, the “crozel” (crois­sant plus pret­zel). The next big thing?

Grumpy Donuts, Syd­ney The menu changes reg­u­larly but not the awe­some flavour and In­sta­gram-wor­thi­ness of ev­ery­thing that comes out of the Grumpy Donuts (grumpy­donuts. com) kitchen. Think brown-but­ter ic­ing with toasted brioche crumbs. Syd­neysiders can or­der on­line or visit the Cam­per­down shop.

Gourmet Glaze, Ade­laide Gourmet Glaze’s (gourmet­glaze. com.au) sweet menu fea­tures no less than 19 dif­fer­ent flavours – in­clud­ing Ap­ple Cin­na­mon Pie, Pink Co­conut and Is­land Flake Ring – and there are mul­ti­ple stores around Ade­laide. Bom­bolini, Can­berra At Bom­bolini (0424 381 235), they make one thing ex­tremely well – hand­made Ital­ian dough­nuts filled with a va­ri­ety of cus­tards and jams. Zest is added to the en­riched dough, which is left to proof for a longer pe­riod to de­velop a sour­dough flavour.

Lady Hester, Ho­bart Spe­cial­is­ing in sour­dough dough­nuts with Mid­dle Eastern­in­spired fill­ings, Lady Hester (la­dy­h­estereats.com) is all about grown-up treats. For­get pink glaze and think more along the lines of pre­served-lemon curd; dark choco­late, fen­nel seed and salted caramel; and gin­ger cream, rhubarb and pis­ta­chios.
