Australia? Coffs Harbour, on the North Coast of NSW, for its natural beauty, country lifestyle and great resort facilities.
Beach? The hidden postcard-perfect Red Rock Beach, 30 minutes’ drive north of Coffs.
Culture shot? Cairns Art Gallery in Far North Queensland. It’s small but was filled with extravagant Australian textiles and Aboriginal art when I visited.
Produce? Tasmanian oysters from the Barilla Bay oyster farm.
Restaurant? The Stunned Mullet in Port Macquarie, on NSW’s Mid North Coast, for modern Australian finedining with beach views. Stopover hotel? Novotel Pacific Bay Resort in Coffs Harbour is surrounded by beaches and forest and has a poolside bar, spa and kids’ club.
Experiences? Eating the chocolate-coated bananas at the Big Banana, Coffs Harbour; snorkelling off Hamilton Island in Queensland; and visiting Parliament House in Canberra.
