Heal­ing Ba­nana Pan­cakes

These sim­ple gluten-free pan­cakes are a lovely break­fast to en­joy on a week­end morn­ing or when you want to im­press the kids. It’s a great way of show­ing them how de­li­cious healthy liv­ing is.

Serves: 1 Prep time: 10 min­utes, in­clud­ing cook­ing

◆ 2 eggs, beaten

◆ 1 ba­nana, mashed

◆ 2 heaped ta­ble­spoons co­conut flour

◆ a pinch of ground cin­na­mon

◆ 2 ta­ble­spoons al­mond or co­conut milk

◆ 1 tea­spoon vir­gin or­ganic co­conut oil

◆ your choice of home­made gra­nola, Greek-style yo­ghurt, sliced ba­nana, al­mond but­ter or fresh berries, to serve Place the egg, mashed ba­nana, co­conut flour, cin­na­mon and milk in a bowl and mix well. Melt the co­conut oil in a non-stick fry­ing pan over medium heat. Add 3 ta­ble­spoons of bat­ter for each pan­cake and cook for 2 min­utes and then flip and cook the other side for an­other 2 min­utes. Plate up and fin­ish with your choice of top­ping.
