Healing Banana Pancakes
These simple gluten-free pancakes are a lovely breakfast to enjoy on a weekend morning or when you want to impress the kids. It’s a great way of showing them how delicious healthy living is.
Serves: 1 Prep time: 10 minutes, including cooking
◆ 2 eggs, beaten
◆ 1 banana, mashed
◆ 2 heaped tablespoons coconut flour
◆ a pinch of ground cinnamon
◆ 2 tablespoons almond or coconut milk
◆ 1 teaspoon virgin organic coconut oil
◆ your choice of homemade granola, Greek-style yoghurt, sliced banana, almond butter or fresh berries, to serve Place the egg, mashed banana, coconut flour, cinnamon and milk in a bowl and mix well. Melt the coconut oil in a non-stick frying pan over medium heat. Add 3 tablespoons of batter for each pancake and cook for 2 minutes and then flip and cook the other side for another 2 minutes.
