Where Halcyon House, Northern NSW, Australia Why All your Pinterest dreams will be fulfilled with bursts of colour, eclectic antique furniture and quirky artworks – all set against the backdrop of beautiful Cabarita beach. The 21-room boutique accommodation was once a surf hotel, and like the name suggests, its architecture conjures memories of the halcyon days of Aussie summers past: family road trips, Zooper Doopers and highway motels… but way more luxe. Head outside when ready for a walk along the beach and headlands the property opens onto, or go for a spin on a bike. Your stomach won’t be ignored either. The restaurant, Paper Daisy, run by ex-Noma chef Ben Devlin, boasts the kind of food city slickers would line up hours for. Our highlight? It has to be the pool – it comes complete with blue-striped sun loungers and a drink (and ice-cream) cart. There’s really no reason to ever leave.
