1 ta­ble­spoon veg­etable or olive oil 1 red onion, sliced

2 cups shred­ded red cab­bage 1 ap­ple, peeled, cored, grated Pinch of ground cloves 1 ta­ble­spoon red wine vine­gar 1 tea­spoon caster sugar

2 kran­sky sausages, halved

length­wise

Cook­ing oil spray

4 long bread rolls, split

50g baby spinach leaves Whole­grain mus­tard, to serve

1 Heat

oil in a large fry­ing pan over mod­er­ate heat. Cook and stir onion for 3 min­utes or un­til soft. Add cab­bage; cook and stir for 2 min­utes or un­til wilted. Stir through the ap­ple, cloves, vine­gar and sugar. Sea­son to taste. Cook for a fur­ther 5 min­utes or un­til soft.

2 Mean­while,

heat a char-grill pan over high heat. Spray sausages with oil; cook for 2 min­utes each side or un­til browned.

3 Fill

rolls with the cab­bage mix­ture, spinach and kran­sky. Serve with mus­tard.
